Black Bean & Sausage Soup
16 C Water
1/2 Tbsp Cayenne Pepper
2 tsp Italian seasoning
1 1/2 tsp Onion Powder
1 Small onion, chopped
2 Stalks of Celery, chopped
1/2 Large Green Pepper, chopped
2 C Sliced Garlic Sausage (or sausage of choice)
1/2 C Dried Black beans
3 C Dry Pasta (rotini, medium shells, bow ties or pasta of choice)
Combine water, cayenne pepper, Italian seasoning, onion powder, and veggies in LARGE soup pot. Simmer on LOW heat for 1 hour. Add sausage and beans and simmer for 2 hours. Add pasta, and simmer one more hour. Serve topped with shredded cheese, if so desired.
